The first vines were planted in 1985, and 16 years ago they established the Wills Domain brand. Since that time, Wills Domain has earned a reputation for providing some of the best wine and fine dining in South West Australia. Wills Domain enjoys an enviable location situated in the Gunyulgup Valley, Yallingup, which is at the northern end of the Margaret River wine region. The Haunold Family produced its first Margaret River vintage in 2001. Winemaker Bruce Dukes has been making their award-winning wines since this time.
The Cuvee d’Elevage Cabernet Sauvignon is a classic Margaret River wine with Bruce Dukes producing single estate grown fruit to create a richly flavoured, exquisite wine with depth and structure and is considered by the estate to be their most prestige range.
Dense aromas of plum pudding, dried apricots and eastern spice introduce a voluptuous palate, boasting silky tannin and delicate hints of fresh summer berries and earthier tones of toasted oak and freshly cracked allspice. The wine culminates with a clean, persistent acid line, with lingering tones of red berries, white pepper and vanilla pod.
Hints of plum blossoms, allspice and cedar gently introduce bolder tones of black fruits and leather on the nose. The palate enters with subtle aromas of forest floor, brambles and vanilla pod, followed by a vibrant burst of freshly picked mulberries, roasted coffee beans and cherry skin. The finish is refined and focused, leaving you with hints of potpourri, blueberry jam and dark chocolate.
White pear, citrus blossom and brioche greet the nose with subtle hints of white flowers and braised nuts. The palate is fine and focused driven by a tensile core of structured fruit and oak finishing with a fine minerality dripping with grapefruit and zested lime.
